Ingredients
  

  • 1/2 Cup Extra Virgin Olive Oil
  • 4 Cloves Garlic (minced & crushed)
  • 1/3 Cup Lemon juice (fresh lemon juice recommended)
  • 5 Ounces Parmesan cheese (grated)
  • 1 tbsp Anchovies (if fresh then finely chopped but paste is best)
  • 1 Large Egg
  • 1/4 tsp Black pepper (freshly ground)
  • 1/2 tsp Salt
  • 1 tsp Dijon Mustard

Instructions
 

  • For Hand Whisk:
    If you are using a hand whisk then mince and chop garlic and anchovy with a knife. I am using paste and roasted fine-chopped garlic. Mix both of them and set them aside.
  • In a medium bowl whisk egg, lemon juice, and dijon mustard together until frothy and creamy. Now add olive oil and whisk the mixture keep mixing it until lightens and thickens.
  • After adding all the oil check the consistency if it is too thick then add water and whisk it again for a smooth creamy texture.
  • Now add mashed anchovies paste, garlic, and parmesan cheese in it and mix it well. Add salt, and black pepper to the mixture, and your Cesar salad dressing is ready.
  • For Blender:
    Combine anchovies paste, garlic, lemon juice, egg yolk, dijon mustard, parmesan cheese, ground black pepper, and salt in a blender and blend it well.
  • Now slowly drizzle the oil while blending until it becomes thick and creamy. If it is very thick then add a little bit of water to make it thin. The Cesar salad dressing is ready to serve.
